About this deal

Named for and probably grown by the Hidatsa tribe who raised corn, squash, beans, and sunflowers in the Missouri River Valley of North Dakota. They’re a climbing variety of Phaseolus vulgaris, the same incredibly diverse family of beans from the Americas that includes borlotti, cannellini and haricots. Eating kidney beans may also help reduce risk factors for heart disease, such as high blood pressure.

But, if you want to make foul from scratch, you can start with 1 cup dry fava beans. You'll need to soak the beans overnight. Drain fully, then cook in plenty of water for about 1 hour or so until tender (see recipe notes.) 2.
