Best English – Cotswolds Founder’s Choice: a year and a bit after its first release and Cotswolds has already risen to the top of the increasingly big English whisky heap. The Founder’s Reserve is an interesting whisky, showcasing the distillery’s STR casks – shaved, toasted and recharred wine casks, a type much-loved by the late Jim Swan, distilling consultant extraordinaire and creator of the Cotswolds style – a punchy type of cask that can overpower whisky when not managed correctly. As the award shows, despite the distillery’s relative youth, Cotswolds know how to make good whisky. Notes: Interesting stuff. It's both young and woody, and sweet and spicy, all at the same time. Not quite my preferred style, but it's an enjoyable dram. I did expect more peat influence from the 22 ppm - measured in the finished whisky, not the malted barley, remember. I'd put this Ailsa Bay on par with Talisker as far as peaty-ness goes, and Talisker is "only" 25 ppm on the malted barley, so probably around 10 ppm in the finished whisky. But phenols are a funny thing, and this isn't really an exact science - it's very much subjective when it comes to tasting and smelling. This Ailsa Bay is certainly a sweet whisky, possibly a little too sweet, at least for my tastes. It does hide it's strength well, at not-far-below 50% ABV and obviously a relatively young age, there's only a little touch of heat behind the spices on the palate. I can see this working well for a newcomer to peated whisky, or a whisky novice, provided they have a sweet tooth! This is a Lowland’s delicate and balanced whiskey that comes with notes of sweetness. Glenkinchie is one of the best Lowland single malt scotches, a well-known Lemon Malt. The scotch is released by Diageo’s flagship in their Classic melt series. The most readily available scotch is Glenkinchie, which originated from Glenkinchie distillery in East Lothian. NoseIt has quite a floral aroma with a fruity scent. The orange peel and cardamom notes offer a fantastic aroma. Palate It is also smokier. For smoke level they’ve used 22 PPPM (phenol parts per million) instead of 21 PPPM. The whisky has been matured for first 6-9 months in former Hudson Baby Bourbon barrels (by Tuthilltown Spirits) which range in size from 25-100 liters. After that they age the whisky in first-fill and refill American oak and virgin oak for several years. One of the things I love about Ailsa Bay is how it delivers a perfect example of how regionality in Scotch whisky has eroded. It is rarely, if ever, relevant nowadays as this is a peated Lowland Scotch. That’s not the typical ‘Lowland style’, but it works and is a beautiful whisky too. More on that soon.

Ailsa Bay contains 21 PPM, the precise measurement of the phenol content in parts per million, which is assessed prior to bottling and is also the only Scotch whisky to undergo ‘Micro Maturation’. The distilleries new make spirit is first filled into Hudson Bay Bourbon Casks that are between 25-100 litres in size for six to nine months to mature. They are then transferred into virgin, first fill and refill American oak casks for several years. The process the first of its kind within the Scotch whisky industry. There is a long history of malt distilleries being built within grain plants: Inverleven at Dumbarton (1959-1991), Ben Wyvis at Invergordon (1965-1977), Glen Flager and Killyloch at Garnheath (1965-1985), and Ladyburn at Girvan (1966-1976). All of them were built by blending firms and came into being at a time when an increase in production was deemed necessary. All then closed when a downturn in demand occurred.
