In the Denmark of the 1960s and 1970s, the drinking of bitters, such as Gammel Dansk, was not considered taboo in the morning. Although the complete recipe is a secret, it’s known that there are 29 herbs, spices and flowers in the recipe, ranging from gooseberries to star anise to orange and cinnamon, which sit in a clear spirit for three months. You may not be able to taste the individual ingredient directly but you would certainly be aware of the difference if one of the ingredients were lacking. The liquor is bitterand caught on with the Danish back in the 1960s when they were commonly drinking bitter spirits in the morning.

But it took a further three years before they were sure that the best recipe had been found, what was to result in 1964 in the Gammel Dansk Bitter Dram as we know it today. This was when the Danish- Norwegian King Frederik II was introduced to the bitter by his sister Anna, Electress of Saxony.When coffee is brewed cold, far less acid is extracted from the coffee grounds, removing much of the bitterness that some people find off-putting. Traditionally it is drunk by Danes at certain festive occasions, often in connection with breakfast meals, brunch or at wedding anniversaries and birthday celebrations (which in Denmark traditionally begin in the morning).

Production of the Danish Distillers brands of Gammel Dansk and Aalborg Aquavit moved to Norway in 2015, according to The Local dk, an English Danish news site.
