This process extracts natural oils and compounds and avoids the botanicals being affected by heat in the still, preserving their delicate flavours and viscosity.

Wrekin Spirit Distillery in Shropshire use hand-picked sloes from the hedges on their farm that surrounds the distillery. Pinnock Distillery in Warwickshire has one of the most wonderful locations, situated at the top of the tower at The Castle at Edgehill. Launched in 2019, Berkshire Botanical Dry Gin is produced on the 9,000 acre Yattendon Estate in West Berkshire - the largest grower of Christmas trees in the UK.
