Serious polish on that edge. I am fascinated by this company, have sold scores of the belt model by recommending them to friends. My daughter razored the first knife she sharpened on one I bought for her. Choosing which version to get would depend entirely on your knife collection. If you own a wide variety of knife and blade styles, the the Elite system would be the wiser choice since it comes with a complete set of sharpening stones. I have not yet tried the small knife table. Mostly because all my small slipjoints are currently in pretty good shape and I usually just touch them up with a ceramic rod. But when I do, I will post an update. I also have an old fillet knife that I would like to try, simply to see how the unit can handle the odd length and shape. You guys know I like my pros and cons.
