We love the look of the wonderful Afghan pasta for its simplicity and use of traditional flavours.This book absolutely focuses on the food and recipes rather than stories so if you want maximum new dishes to experiment with, this is a perfect book. And yes their okra fries, bacon nan, and chai recipes are in there! If you haven’t, Dishoom serve Indian comforting meals often with a Western twist and it works on so many levels. A sugar high of the finest quality, laced with spices like cardamom and cinnamon, citrus flavours, and nuts. The food of India is incredibly diverse and it’s sad that many of us in the UK think Indian cuisine starts and ends with what we can get at our local takeaway. To finish, there’s a chapter of luscious puddings like salted peanut and jaggery kulfi alongside carrot halwa and pistachio cake.I landed first on a paneer, tomato and kale saag. The photo was the lure for me – cubes of fried cheese nestled in a creamy coconut sauce – as well as the fact that I already had most of the ingredients in my cupboard. Meera explains in the introduction that this recipe persuaded her to finally fall in love with kale – and persuasive it is. What I thought: I went a bit pastry mad cooking from East, mostly because I actually had the puff pastry in the fridge anyway – but these two recipes for Tomato, Pistachio and Saffron Tart and Bombay Rolls are just brilliant – enormous fun to make as no anxiety inducing making pastry from scratch required. Making both recipes was like a very enjoyable session at pottery class rather than cooking – it was all about making them look wonderful. I am not sure I achieved that. We love how this book takes on veggies that ordinarily may be underappreciated. For example, there’s a great recipe for roasted whole heads of broccoli, topped with a herby yogurt and a crunchy, well-spiced dukkah. Veganism wasn’t my only constraint. I had much less time on my hands too now that I was a new mum. This meant that elaborate dishes, or those that required too much time to prepare or cook, were left by the wayside. They didn’t make the cut into my column, or into this book.
