The brown sugar in the coconut filling can be replaced with white sugar, but you might have to adjust the quantity as white sugar tend to be sweeter than brown sugar. If you are like me, you will crave once and a while some sweet bread rolls accompanied by a cup of coffee. It is a simple pleasure yet able to brighten my busy days… and also a good excuse to take a break. To make this recipe successfully I recommend having everything measured out and ready before you start working: Know what bowls you’re going to use, line a baking sheet with parchment paper and set it aside, and prep the coconut ahead of time.

Sift and measure icing sugar into a glass or jar. I prefer to use my measuring glass with a small spout as it is easier to pour the glaze onto the coconut rolls later. I find the focus on health in ‘Jamie’s 15-minute meals’ also notable: the recipes in this book have nutritional values calculated and (in contrast with his earlier books) Jamie uses ingredients like light coconut milk, cottage cheese and light yogurt. What I really miss in this book are introductions for each recipe (why do I need to make this?) and I have to say I find the strong emphasis on speed a bit wearing. I absolutely love the gorgeous photography and food styling though. Jamie’s team has done another impressive job: all the dishes look colorful, vibrant and mouthwatering, but pretty doable at the same time. I also like the simple solutions for otherwise extensive recipes and these steamed buns are a great example of that. In a jug, add the water and heat in the microwave at 30 second intervals until it is warm to touch. Then add the yeast and 1 teaspoon of sugar from the dough ingredients. Give it a stir and let stand for 5 - 10 minutes until frothy. For evenly baked and golden brown coconut rolls, tent a loose piece of foil over the rolls after about 15 minutes in the oven (halfway baked through). This will make the center and tops bake evenly and avoid them brown too much on top before the centers cook.

In addition, do not confuse our coconut bread rolls with the Samoan Pani Popo which is smaller, less sweet, and has no filling. It looks like more a sweet bun than a roll. If the mixture is too wet and gooey, then add oats, almond meal or protein powder. It helps to throw those dry ingredients in the food processor to help the mixture set well. Roll up TIGHTLY into a log so the rolls won’t be opening while baking. It is ok if the filling runs down to the pan. You will have rolls with crunchy edges on the bottom. It is delicious!Once the dough has doubled in size, turn it out onto a lightly floured work surface. Using a large rolling pin, roll into to a rectangle measuring 25 cm by 30cm. Once you’ve made the energy balls, place them in an airtight container with the layers separated by parchment paper, and they will keep for around 10 days in the fridge. You can also freeze the balls in the same way and defrost them in the fridge overnight before enjoying. Can you make these balls without a blender?
