Some people are not sure how much water to add to the compartment and the answer to this, is you add enough water such that when you spin the sharpening wheels, they are evenly lubricated with water. Rule of thumb: It’s always best to add less water than more! The SH550/BR has a sleek and compact design and weighs just 230g, so it’s ideal for use in any kitchen, whether domestic or commercial. Although it’s compact, it’s still sturdy enough to handle easily without worrying about it becoming unsteady during use. Due to the fact that the sharpening groove and the ceramic wheel are not parallel, the oblique angle of the ceramic wheel is able to restore the razor sharpness of the knife. I've only sharpened my knife once since I bought it, and it's still very sharp after 2 weeks! I feel like my global knife is alive again! Just one chop, and my sandwich cuts in half, just like brand new when I first bought it. I'm not sure of the edge angle but I'm guessing from looking around 20*. I'm keen to take them down to 15* though, do you know if the minosharp has a stone capable of a regrind?
