For a tasty flash-chilled coffee, use half as much water as usual and weigh out a half batch’s worth of ice (for this recipe, 350 g) directly in your carafe. You’ll have to pour a lot slower, but the coffee will drip directly onto the ice for tasty iced coffee.But why are there so many Chemex filter types? And how are they different? I now know what I didn’t years ago, and I want to help you. Chemex filters come in all shapes and forms. From oxidizing processes to water baths, a square filter with points poking out of the top for easy removal, or a circle filter paper sitting flush; they function exactly the same and it’s really a matter of individual taste. Disposable paper filters are for a single use, so they generate the most waste. However, Chemex filters are biodegradable and compostable. Note: this is all my personal rambling opinion—”better” is a meaningless word here, exactly zero scientific rigor or actual quantifiable research was used, and I paid for everything myself. Yes, but it depends on the filter. You can use classic paper filters designed for pour-over coffee, which work reasonably well with Chemex brewers.

I love the Chemex, and it’s one of my favorite coffee brewers. The first cup of coffee I brewed with the Chemex was with a circle filter, and it looks like this: Slowly pour water in a spiral or circular motion until the water level reaches around a half inch below the top rim of the brewer. When the level drops by about an inch (you don’t want to see the top of that coffee bed while brewing) pour again and repeat as needed until you’ve used all the water. With as much water as you’re using in this recipe, you’ll want to get all your water in at around two minutes. I also have a thermal carafe (Alfi from W-Sonoma). I tried a number of carafes and this one is spendy but keeps the coffee hot and fresh tasting. If you don’t want to use disposable paper coffee filters, you can use metal or cloth filters with your Chemex. Metal Chemex Filters If you have residue on the bottom or feel you need a deeper clean, fill your Chemex halfway full with ice and a quarter full with water. Add a few tablespoons of salt and a couple drops of liquid soap. Swirl and slosh this around until it’s all bubbly, then pour it out and rinse. Rinse the coffee filter with plenty of hot water to help “seal” it against the glass and remove the paper taste — it also preheats your Chemex. Discard this rinse water (magically, you don’t actually need to take out the filter to pour out your water) and set up your brewer on a kitchen scale. The Chemex carafe is a beautiful serving vessel, so bring it over to the table for a nice centerpiece, or just pour your coffee into mugs and serve right away. After enjoying your coffee, the next step is cleaning your coffee maker. Simply dump the drained filter in the trash and rinse the Chemex with any hot water remaining in your kettle.
