When I see multi-coloured carrots, it sparks joy. I have no idea why, but it does! Just so pretty, and when roasted, the sweetness of heirloom rainbow carrots are even more elevated. This lemon-yellow rooted variety produces sweet roots that are ready to harvest in about 75 days! The roots are typically about 8 inches long and are described as “crunchy and full of juice.” Pests and Diseases United States carrot consumptionpeaked in 1997 with Americans consuming 14.1lbsper person, but this number has since dropped off to 7.71lbsper person in 2020. California produces 85% of carrots consumed in the United States, likely due to their year-round production ability. Michigan and Texas are also important carrot-producing states today. Description of Carrot Plant The bright taproot colors of carrots are accompanied by feathery foliage that can reach about a for in height. Yellow carrots – similar flavours to orange carrots, and they contain lutein, which is another nutrient that aids in eye health. Because of the relatively vertical nature of the plant’s form, carrots can be grown fairly densely, and are therefore useful within the economy of space in a smaller growing area. That is, even a little garden can produce a lot more in carrots than by, say, lettuce or cucumbers. The seeds can be sown from early spring right through late summer for a harvest that will last nearly year round, so they form an essential part of nearly every vegetable garden.

If you have the luxury of growing carrots without the presence of carrot rust flies, you may still be concerned with soil dwelling insects such as wireworms, which seem to be true lovers of carrots. They are so attracted to carrots, in fact, that a full-grown carrot makes a very good lure for wireworms. Just bury carrots or carrot pieces in several areas around the intended seedbed, and mark where you bury them. If wireworms are present, you can then dig up the carrot pieces and easily remove the wireworms from the bed, or at least go a long way to reducing their population. Carrots have been a staple crop in the human diet for centuries! They’re nutritious, filling, and they’re easy to store for long periods of time, so it’s no wonder why they have such a rich history of cultivation. If you wish to store your carrots for a longer-term, then a root cellar can be a great way to accomplish this! Root cellars are typically dark, dry, and cool. Many root crops (like potatoes) store exceptionally well for long periods in a root cellar.Carrots can be canned in a pressure canner or they can be frozen as well. Plant Uses There are countless ways carrots are used in the kitchen. A basal rosette of leaves forms during the first year, and the plant will remain like this until bolting in the second year when it sends up a flower stalk that can reach up to 3 feet tall. Temperatures must be under 50⁰F to induce flowering, and if harvesting the roots to eat then bolting is undesirable. Work the soil to a fine texture 15-25cm (6-10 in.) deep to allow the carrot roots to grow long and shapely.Early sowings may benefit from some protection, and seedlings should be thinned gradually to around 10cm. White or cream coloured carrots – have a milder flavour and are less earthy than the others. They are also considered to be sweeter. At the same time, you can roast the red onions. First, peel and cut the red onion in half. Then cut each half into thirds. You end up with 6 pieces per onion. Aster yellowsis a disease that is transmitted by leafhoppers, which are small insects that feed on the juices of the plant. The roots will become hairy and the tops will become yellow if plants have become infected with aster yellows.

To match with the roast lamb we were having for dinner, I wanted to create a roast vegetable dish but not too heavy. So when I saw colourful heirloom rainbow carrots, I knew what I was making to match. The Carrot Rust Fly – This pest lays its eggs at the base of the growing carrots.
