Alex:One of the oldest Gin brands comes from Menorca - The Xoriguer Distillery in Mahon was established in 1794 and is still distilling the same recipe today. And through its colonies, Spain also brought Gin to the Philippines - the country with the highest Gin consumption per person in the world. Palma Gin is a premium gin from Mallorca, Spain. It is a unique and refreshing drink that has gained popularity in recent years. Palma Gin is also known for its beautiful bottle design. It’s sleek and elegant, with a geometric pattern that is reminiscent of the Art Deco era and is a work of art in its own right and looks beautiful on any bar. It is inspired by traditional Mallorcan tiles and printed with organic paint, making it eco-friendly and recyclable. The company logo is inspired by the rose window in La Seu Cathedral, one of the most iconic spots in Palma. Gin Palma is distilled with locally foraged wildflowers and fresh citrus fruit from the rural orchards of Mallorca, the result creates a fresh, dry, citrus infused gin with a delicate and smooth finish.

We always love to try new gins but some favourites have been Harahorn Gin, Seppeltsfield Road Barossa Shiraz and Spirit of Hven Navy Strength. The unique core flavour comes from the Mallorcan juniper berries capturing the subtle essence of the Mediterranean Sea. Almond flowers, foraged once a year before spring, combined with orange leaves and lavender, create a delicate floral scent and sweetness. These core ingredients really enhance the depth of flavours from the other botanicals we use. After 2 years of research and a few delays along the way, we officially opened Mallorca Distillery in 2018, the first craft distillery to open in Palma de Mallorca. Our goal was to take everything the island had to offer and somehow capture this in the look, feel and taste of our gin. So we started searching for produce and botanicals that grow naturally on the island and worked hard to create a gin recipe, which we feel, represents Mallorca for its delicate flowers, zesty citrus and earthy vegetation. After a year spent developing the recipe for our first product, we officially launched PALMA GIN in September 2018. Both originally from Newcastle, we have had quite the journey so far, from working on luxury super yachts around the world, to opening and selling an award winning bar-restaurant in the centre of Edinburgh. We have now focused our attention on recently opening Palma’s first craft distillery creating premium products made from the island, for the island. One of the key products of the Palma range is their gin, celebrated for its smoothness, flavour complexity and the genuine reflection of Mallorcan botanicals. The brand places emphasis on producing spirits that are not just consumable products but also a representation of the location from which they originate, sharing a piece of Mallorca with every pour. Through this, Palma successfully introduces drinkers to the vibrant nature of the island authentically and enjoyably.After the taste comes the bottle design, which is inspired by the traditional Mallorcan tiles, known as ‘suelo hidraulico’. This was the key inspiration and starting point in creating the stunning tile design, which took over a year to complete and is printed with organic paint directly onto the bottle using a specialised process, resulting in an eco-friendly and recyclable product. Definitelya G&T with a quality natural tonic and peel of orange or in a classic Negroni to add the perfect depth of flavour. We are a small craft distillery (approximately 200 sqm) with a Spanish 500 litre copper pot still located in the industrial heart of Palma de Mallorca. It has been a rollercoaster to say the least, moving to a non-English speaking country, setting up a distillery and trying to create a unique and local brand whilst trying not to impose on the traditions of the local Mallorcans has been the biggest challenge.

We caught up with Alex von Eisenhart Rothe, Co-Founder of LAW Gin in Ibiza, and Byron Holland, Co-Founder of Mallorca Distillery and Palma Gin, to find out what makes Spanish Gin special and how the industry has grown in recent years: Palma, a spirits brand, began its journey in the industry by creating distinct products that reflect a deep appreciation for organic production and local ingredients. Originating from the island of Mallorca, the brand is well-known for its dedication to producing high-quality, organic spirits, which stem from the region's rich agricultural bounty. Byron:In terms of production, the Spanish Gin Industry, has developed significantly in the past 10 years. There has been notable increase in the number of smaller craft producers throughout Spain, challenging the bigger traditional regional distilleries in terms of variety and quality in offerings. As a result, these larger producers have also revived and modernised their range of Gins. After maceration the distillation commences, passing the vapours through an infusion basket containing the more delicate botanicals, including Wild Almond Flowers, Lavender, Orange Leaves, Lime Zest and Tomato Branches. The combination results in a lightly floral and citrus gin with a smooth earthy finish. A true taste of Mallorca.

With a 2000-year history, Palma hosts the bespoke copper pot distillery where Gin Palma was founded and created. True passion and desire combine to produce a handcrafted spirit, of pure quality, using only local, natural and organic botanicals, ensuring intricate care and attention with every distillation. We offer distillery tours which last approximately one hour, giving you an insight into the exciting world of gin, its history and how we make our products for €15pp including G&T and tastings. Or you can take part in a 'Make Your Own Gin' Experience, lasting approximately 3 hours, this includes a tasting of over 30 different botanical distillates, numerous G&T’s and you get to take home your very own bottle of your blended recipe along with a bottle of any of Mallorca Distillery’s products for €120pp. The use of locally sourced ingredients is paramount for Palma, ensuring that each bottle contains a genuine taste of the island and its unique character. This principle not only solidifies the brand’s tie to its locality but also promotes sustainable practices by utilising readily available resources and minimising transportation. Alex: Of course the 'Gin Wave' has hit Spain as well and many new brands have come to market in recent years. Spain is now reported to have the highest overall gin consumption in Europe. PALMA GIN is distilled using only the highest quality products available. Each botanical has either been hand foraged from the island or is certified organic, giving the spirit it's beautifully smooth finish. Organic Wheat Spirit is first macerated for 18-20 hours with the unique base botanicals; including Mallorcan Juniper, and local fresh citrus peel.
