About this deal

Castor sugar- this is also known as extra fine granulated sugar or berry sugar. It's a finer granulated sugar that dissolves readily into the meringue making it ideal for macarons, which is heavily dependent on a strong and healthy meringue. If you can't find castor sugar, just use regular granulated sugar. Do not try to pulverize regular granulated sugar in the food processor to make castor sugar, it results in "chopped-up sugar crystals that will not perform well." (Source: chsugar.com)

Making sure the macaron batter is properly mixed and the shells are baked enough will help combat this. One of the reasons macarons are hallow is they are under baked and collapse when they cool. Can I use boxed egg whites? Preliminary Note: I recommend pulsing the coconut in the food processor a few times to cut it down and break it up. Finer pieces of coconut make a tighter, more compact coconut macaroon that will hold its shape. Measure 4 and 3/4 cups after it’s been pulsed. If you do not have a food processor, spread the coconut onto a large cutting board and roughly chop it. Wipe down mixing bowls with some vinegar to remove leftover oils. How to make French Macarons

FINE ALMOND FLOUR: Almond flour is the ONLY flour that works in this French macaron recipe, however if you have an almond allergy, you could try these nut free macarons by Stella Parks. (I have not personally tried them.) Make sure you use almond flour, not almond meal. Almond flour is much finer and made from blanched, skinless almonds. Almond meal is coarser and contains almond skin. Sprinkle Loaded Macaroons: Carefully fold 1/3 cup (about 57g) sprinkles in the coconut macaroon dough before scooping and baking. Avoid nonpareils (the little balls). Whisk the remaining two egg whites in the bowl of a freestanding mixer until stiff peaks form when the whisk is removed. You’ve baked them on parchment. Unfortunately parchment paper can cause the macarons to bake in oval shapes or have weird non-curricular edges. I’ve found macarons baked on parchment to be more structurally sound with taller feet and less likely to have hallows, but the slight oval shape and wonky edges are so annoying, I always bake them on a good silicone baking mat.

After mixing the batter, fill the prepared pastry bag about ½- ¾ the way full and secure with a rubber band or twist the top so the doesn’t spill out. Fine Mesh Sieve: To obtain a shiny and smooth macaron shell, you must run the almond flour and confectioners’ sugar through a fine mesh sieve. You can use a hand crank sifter if you have one, but I prefer using a mesh one. I’ve seen some suggestions that this is a good recipe to use up leftover mash potato. Now, I am all for using up leftovers and avoiding food waste but there’s two points I’d like to make in regards to that… Put the pastry bag with tip in a large cup with the edges folded over the cup as shown in a picture above. This is an easy way to fill the pastry bag with macaron batter without making a mess.Runny Batter: Your macaron batter will be runny if you overmixed it, deflating more air than intended. Macarons baked with runny batter will over-spread, aren’t likely to develop feet, nor will they have the intended chewy texture. This is why the macaronage step is crucial. Fold the batter together slowly and perform the figure 8 test a few times until you have the correct consistency.

For whipping up the meringue I recommend using fine sugar, that is normal granulated sugar pulse blended into smaller bits (but not going that far that it would turn into powder sugar). Fine sugar is a common type to make meringue however if you are experienced in making meringue you might be ok using normal granulated sugar Coconut macaroons do not spread much while baking. Sometimes they can leak a little sugar/egg white liquid, but if you chopped the coconut up enough, this shouldn’t really happen.
