Rimmer boils condensed milk with butter and sugar to make a caramel of almost toffee-like chewiness. I love the contrast with the softness of the whipped cream above, but I'm still chomping on it long after the other layers have been swallowed, which doesn't seem ideal. Fill the base of each cupcake case with a spoonful of mixture. Unwrap the Mini Galaxy Caramel Eggs and place one in the middle of each case on top of the mixture. Top with another spoonful of the mixture so the cases are ¾ full and the eggs are completely concealed. For the whipped cream: Using a hand mixer or a stand mixer fitted with a whisk attachment, whip the heavy cream, sugar, and vanilla extract on medium-high speed until medium peaks form, about 3-4 minutes. Medium peaks are between soft/loose peaks and stiff peaks and are the perfect consistency for topping and piping on desserts. Make the ice-cream the night before. This recipe is more involved/effortful than many desserts, which makes sense given it has three distinct layers. That said, it was worth it.
