About this deal

Carob contains moderate amounts of calcium and phosphorus, as well as smaller amounts of iron and some B vitamins. Here’s a complete look at the nutrition profile of carob. As you’ve probably noticed by now, I go a little bit crazy over salads during summer. I can’t get enough of them! They’re super easy to make, beautiful, colourful, delicious, refreshing.. Plus, there’s nothing we could possibly crave for more, on extremely hot summer days. In Crete, the carob trees thrive in difficult soils and like arid conditions that are naturally free of fungus and pests. Thus, the uses of chemical sprays are not necessary on Crete Island. The tree grows 15 m in 50 years. It does not bear fruit for the first 15 years. However, once fruiting, it will yield one ton of beans in one harvest. Carob pods are harvested in the middle of September. The growing carob pods look like green broad beans but they turn to a dark glossy brown as they age. Each pod can contain up to 15 seeds.

Phytochemical Profile, Antioxidant and Cytotoxic Activities of the Carob Tree (Ceratonia siliqua L.) Germ Flour Extracts The glycemic index of carob is very low. It does not contain caffeine and is perfectly suitable for individuals with diabetes. In general, it has positive effects on blood glucose levels and is used in the management of diabetes and obesity. The fruit of the carob tree also contains polyphenols, antioxidant compounds that aid in cancer prevention and the management of hyperlipidemia. Carob trees first grew in Israeli and ancient Egypt thousands of years ago, even taking root in the oldest known piece of literature, “The Epic of Gilgamesh.” Critically important as a food source and form of currency, they were truly worth their weight in gold. It is known that carob fruit, the excellent carob, is an incredibly nutritious food. Apart from all its other benefits, carob contains polyphenols and tannins, which are antioxidant substances (as mentioned above) that fortify the organism. Due to the presence of at least six antioxidant substances, carobs exhibit significant anticancer activity. The chemopreventive components it contains are gallic acid, catechins, myricetin rhamnoside glycosides, eriodictyol glucoside, and quercetin glucoside. The Cretan Dakos recipe in our book “Foods of Crete: Traditional Recipes from the Healthiest People in the World” saves both time and your teeth by baking the Dakos for a much shorter time at a higher heat.It has a very strong taste and this you will receive as a treat from the locals in every village, city, restaurant, or coffee shop. Usually, calcium deficiency in our body results in osteoporosis, due to reduced calcium intake, combined with reduced exercise and smoking. In this condition the bones wear out, become porous and take on a spongy appearance. The sufficient amount of calcium, throughout our life and especially until the age of 20-25 years (especially for women) can reduce it by up to 50%. Comparisons to chocolate notwithstanding, carob has enough going for it to be appreciated for its own merits. Its reputation as being a good-for-you option isn’t overstated, even if the flavor comparisons might have been. A couple of shots are enough to make you stumble so don’t overdo it if you don’t want to get drunk. As for their cheeses, most of them are unique and not made in other parts of Greece, staka, malaka, xynomyzithra, myzithra, graviera, kefalograviera, the list is endless. Rethymno lighthouse

Carob has a long history in human consumption. The Greek Theophrastus recorded in 4BC that his fellow Greeks called the carob the Egyptian Fig. There is also evidence that Ancient Egyptians used carob. Both the pods and seeds have been found in Egyptian Tombs. Further, the Romans ate the Carob pods when they were green and fresh for their natural sweetness. Thus, Carob is no newly discovered food. As the founder of Creta Carob, Elias Manousakas states "It is the lost treasure of Crete''.

This type of rusk has become so popular that it can be found all over Greece. However, because of their high oil content, they can sometimes turn rancid, so it’s better to buy them from trusty purveyors or brands, like Manna, which makes any excellent version of this type of Kythera rusk as well as high-quality Cretan rusks. The most famous and arguably the best ladopaximado, though, comes straight from the source: Karavas Bakery on Kythera.

Natural food stores are most likely to carry carob in the baking aisle nearby the cocoa powder. Though sometimes sold in bulk, you’re better off buying sealed bags, since it can otherwise sit around for years, exposed to the air and collecting dust.

Ingredients

My guide told me that Dakos, also know as twice baked bread was a crispy bread (like a big crouton) that was served with a tomato, cheese and olive oil mixture on top.
