You should definitely decant the older Vintage Ports. These acquire layers of sediment after years of aging. They should be decanted 2 hours before serving. Port wines that are unfiltered (such as vintage ports, crusted ports, and some LBVs) form a sediment (or crust) in the bottle and require decanting. This process also allows the port to breathe (allowing the wine to mix with oxygen). Tawny ports can be served a little cooler than Ruby ports. 50-58 degrees is the ideal range, although you can go up to 60 degrees as well. The port is then aged in oak casks for two to three years before being bottled, although some white ports are aged for up to ten years.Tawny ports will last about 1 month if stored in the fridge. (Their oxidation means they have a longer shelf-life.) Because of this sweetness, the port is often served as a dessert wine. But it can be paired with entrees as well. The accidental origin of late bottled vintage has led to more than one company claiming its invention. The earliest known reference to a style of port with this name in a merchant's list is to be found in The Wine Society's catalogue from 1964, which includes Fonseca's Quinta Milieu 1958, bottled in the UK, also in 1964. By the 1962 vintage, LBV was being produced in Portugal and bottled as LBV.
