About this deal

They’re actually part of the onion family, so the flavor is very slightly onion-y, but without the bite. Unfortunately, being related to onions, leeks aren't great for anyone with a FODMAP intolerance, but for everyone else, they make for a very tasty bowl full of important nutrients. We add the green parts of the four leeks, celery, bay leaves, two carrots, and an onion, which isn’t strictly traditional, but we like the flavour.

I use it because I prefer it, however brown rice is a perfectly acceptable substitution. Use a like for like amount and so long as you use whole grain rice, the cooking time remains the same. I completely understand that even though this recipe is a new family classic you may want to change it up sometimes, so here are a few ideas to do just that. Leeksmay look like overgrown green onions, but they have a milder, more delicate flavor that is a bit sweet. Slice the onions in rounds and you can easily substitute them for leeks. I have made this dish many times using sweet onions and it is also delicious. Spices and Seasonings: Experiment with spices like paprika, cayenne pepper, or a dash of nutmeg for a unique flavor twist. Herb Infusion: Experiment with fresh herbs like thyme, rosemary, or parsley. Tie them together with kitchen twine and let them simmer in the soup.

Add the leeks, carrots, celery, onion, and garlic. Saute them until they become tender and fragrant, about 10 minutes. Caramelized Leeks: Reserve some thinly sliced leeks and caramelize them in a separate pan until they turn golden brown.
