I want to give my consumers the best drink that I can, and that means using the best botanicals I can source.’ In addition to the Jacobite rose, Stuart uses orange, lemon, heather, pink peppercorns and more, mixed with Loch Ness water.

A glass of red wine. Having travelled extensively I appreciate a heavy red wine which is the perfect pairing with food when at home cooking to relax. If you were a drink, what would you be and why? A dark and stormy. You have to serve your favourite superhero or celebrity a drink. Who is it and what do you serve?We understand why they’re bringing in it and we’re on board with recycling but we don’t know how the scheme is going to operate properly and we don’t know how much it’s going to cost as a producer,” says Stuart.

There’s also The Old Tom coconut, The Old Tom’s naughtier brother. It’s a sweeter version that we just recently launched.’Then I started putting together my plans for what I wanted here in the estate which included the distillery. Work is well underway to transform the house and grounds to its former glory, including a garden restaurant, guest rooms and plans as a unique luxury wedding venue.
