This bottling rests the gin in previously used bourbon barrels for nine months to give it a fascinating sweetness of vanilla and oak. You will find the gin to be very aromatic and filled with rich flavors, making it a true delight for any gin lover. In the run up to his PhD and post-doc studies in hematopoiesis (the formation of blood cell components from stem cells), Matt spent a summer at Cambridge University on a Royal Society internship studying bugs, specifically flies, and even more specifically, blue bottle flies. Under the microscope, he found the indigo wings of these household nuisances to shimmer intricate patterns of iridescence unique to the majesty of nature, patterns that people peeved by the pest do not perceive. Aviation is produced in Portland, Oregon, by House Spirits Distillery. It is distilled from neutral grain spirit with 100 percent rye base, an unusual beginning in the gin market. It's flavored with juniper, anise seed, Elettaria cardamom, coriander, lavender, sweet orange peel, and sarsaparilla. It, too, is slightly overproofed, bottled at 42 percent ABV (84 proof), so it's not as delicate as it's often made out to be.

A cold glass of Blue Bottle Gin serves as the product of this labour-intensive operation. The actual meaning of the adventure becomes clear as the liquid caresses your lips and adorns your palate. Hayman's Old Tom Gin is one of the best examples of this old-world style, though it was only recently launched in 2007. Produced by Hayman Distillers of Witham, England, it is based on a family recipe from the 1870s. If you have yet to taste genever, it is unlike any other gin you've had. This style of gin is as if a soft Scotch whisky were married with gin, and Bols' malty feel is a perfect example. Based on Lucas Bols' original recipe from 1820, it has a wonderful balance of sweet malt and subdued juniper and citrus. It is triple distilled using equal parts malt wine and neutral grain spirits that are infused with natural flavors. Distillation is a delicate ballet requiring labour-intensivecuracy. A genuinely remarkable gin is produced by multiple rounds of distillation, which guarantees that only the cleanest and most flavorful ingredients make it into the finished product. The best thing about this is that each spirit is an attempt to capture some essence of its geography, often using locally sourced botanicals to flavor what otherwise would essentially be, well, vodka. With so many bottles to choose from, we’ve broken down some of the best gins out there to try now by highlighting stellar examples of the new and old school. Here are some of the best gin brands available now, from traditional London dry to brand-new innovations. Gin isn't just from England and the U.S. Distilleries all over the world produce versions that try to capture the character of where they're made. There are three main categories. Distilled gin is produced from a mash of grains in the same way that whiskey might be. Redistilled gin is a neutral grain spirit that has been distilled a second time. And compound gin is a neutral grain spirit that’s been infused with flavors (this is the least common style). While you can use nearly any botanical you can think of to flavor gin, juniper is the key ingredient. This gin is distilled in a copper pot still named "Marjorie." The botanical list includes juniper, angelica root, cassia bark, cinnamon, coriander seed, lemon peel, licorice, nutmeg, orange peel, and orris root. It is bottled at a standard 40 percent ABV (80 proof). Old Tom Gin: There are no set guidelines for this style of gin, but it is sometimes sweetened with a bit of sugar or other botanicals, licorice is occasionally added, and it can be barrel aged (which is another style of gin in and of itself). Current examples of Old Tom gin come from Barr Hill in Vermont, Ransom in Oregon, and Hibrimi in Iceland. This is a double-distilled gin produced in a two-stage distillate . Juniper, coriander, angelica, licorice root, cassia bark, Florentine iris, and lime peel are introduced in the first distillation. Bitter orange peel, lemon peel, and lime peel in the second. It is finished with Icelandic glacial water and bottled at a standard 40 percent ABV (80 proof). It's time to go old school and get a taste of gin brands that have revived the oldest gin recipes in the world. We begin with the oldest of the two, genever. In short, the phrase "London dry" means that the spirit must be distilled in a column still to at least 70 percent alcohol by volume (A.B.V.). Natural botanicals can be added to the resulting neutral spirit only through re-distillation, but any additions after distillation beyond water and a little bit of sugar disqualify the gin from being considered a London dry.

The artisans who create Blue Bottle Gin are the only ones who are aware of a special combination of herbs and spices that adds mystery and depth to the finished product. The spirit’s enigmatic appeal is enhanced by a number of closely kept ingredients, including cardamom, coriander, and angelica root. The Dance of Distillation Martin Miller's is a modern take on traditional gin. It has that wonderful juniper dominance of a London dry and it is perfectly balanced, crisp, clean and simply an extravagant gin. Also simply referred to as “dry gin,” this is the most traditional and most popular type of gin⁠—and, despite its name, doesn’t actually have to be produced in England. London Dry: The leading gin style, which derives its name from its city of origin but does not dictate where a gin has to be made. To be London Dry, a gin's flavorings must be added during distillation, and no synthetic flavorings can be used. Nothing may be added after it's distilled except water to dilute the gin to the desired proof. Fun fact: the bottle design was inspired by an old Victorian hip flask found at Notting Hill Market!] But others see something we laymen and women wouldn’t normally find in the microscope lens: they see beauty. He learned some of this alchemy when researching gin before the establishment of the Three Fingers Distillery, the outfit that Randall’s investors helped fund as a logical expansion of the brewery. On a one-litre still, Matt tested the distilled qualities of 35 individual botanicals, immediately eliminating 15 of those and modifying the combinations and quantities of the remaining 20 to find the ultimate recipe for Three Fingers’ first spirit.
