The problem with the La Pavonis is, the brew head gets too hot after pulling one shot; you can cool it down with a ghetto fix — wrapping a cold cloth around the piston assembly to draw off excessive heat — but it’s a crap shoot and even if you get the second shot pull okay, the third one is going to be a torched, burnt shot. The Flair Espresso Maker’s design, especially with the big, bulky, 272g steel “sleeve” that doubles as a water pressure chamber and holder for the portafilter portion of the machine, can be made super hot and retains heat during the brewing process. Take control of your espresso by measuring your coffee beans by weight, and by measuring out output of espresso. With Flair you have a bit of work to do before pulling your shot, this is mainly the compromise you have to make to get the increased portability.
