I don’t know about you but I think there is a balance between being hungry but not too hungry you feel starving before Thanksgiving dinner. Take handfuls of the playdough-like dough and mash them down connecting one handful of dough to another and flattening with your hands until you have a big rectangle of partially-flattened dough on the parchment that fits inside the cookie-sheet drawing. from the wheat kernel’s outer bran and germ, so graham flour and whole wheat flour have very similar health benefits. She has taught cooking and gardening lessons through Kirkwood Community College and has hosted farm -to -table suppers at her family farm. I made them to use in a different dessert recipe, but I almost ate all of them before having the chance to do that hahaha.

I have always loved graham crackers, probably more than most cookies actually, since they’re just subtly sweet, so they can be enjoyed as more of a snack. To make the crackers into s’mores: Just sandwich fire-toasted marshmallows and your favorite chocolate bars in between. Place your stick of butter, granulated sugar, and brown sugar into your stand mixer with the paddle attachment secured. Just a note: this is a very soft cookie dough so make sure your countertop is floured along with your rolling pin.

Whole wheat pastry flour: Whole wheat pastry flour is nutrient dense while also being low in protein, which yields a soft and tender baked good.On a lightly floured surface (I push two Silpats together) roll out dough into a large rectangle, about 1/8-inch thick. I also dock the dough before baking – I used a chopstick end ( a la Bravetart) to get a more authentic look. I had to eyeball the measurements for everything cause the batteries in my scale died, and I don’t have proper measuring tools– the dough was too soft and they turned out a bit cakey as a result but were VERY delicious, so that’s a win for in my book! While the first tray bakes, keeping the second tray in the fridge so the dough stays cool will prevent spreading. My oven is temperamental and I get better results baking 1 tray at a time; and keep the remaining trays in the fridge. Continue rolling out then next ball of dough and the dough scraps and cut into crackers until you don't have any dough left to cut.

Although I have not tried it, I have a feeling you could keep these crackers vegan by replacing the butter with vegetable shortening or use a vegan butter substitute. LMK how the pretzels go – super easy and you’ll love them (or okay, your kids will REALLY love them I bet! In this case, I would HIGHLY recommend chilling and then freezing your scooped dough, and baking from frozen.

I just use a wholemeal pastry flour which has a low protein content to make sure the crackers are tender. I am having one problem and that is I’m having great difficulty trying to read the pale or pastel print. FLOUR ALTERNATIVES: Whole wheat pastry flour or all-purpose flour may be substituted for the white whole wheat flour.

I prefer the pizza wheel method so I didn’t have to re-roll dough as many scraps that come from using cookie cutters. The only item that may throw you for a loop is whole wheat pastry flour, otherwise known as graham flour.
