I appreciate it's history as a pre-gin juniper heavy spirit but I find it's earthiness (much like natural saké) is just too much for modern ginny drinks and cocktails. They couldn't easily find it, because at the time it was only being sold in the Netherlands and Belgium. They appear in a wide variety of cocktails and can be mixed with other drinks or used in baking – there’s a reason that the sweeter varieties have become staples in many classic desserts!
