About this deal

Biography: Founded in 2015 by Victor Lugger and Tigrane Seydoux, the Big Mamma family includes (so far! Italian food has lost out a bit recently, despite being one of the best cuisines in the world it just didn’t suit the modern foodie aesthetic – not ethnic, not unusual, not really designed for sharing plates. A large book with wonderful photographs, a nice grosgrain ribbon page marker, and clearly written recipes. For example, at the top of each recipe the length of time involved is listed, broken down into preparation time, cooking time, and sometimes something like resting time, or chilling time.

The recipe on page 108 supplied by Giuseppe Cutraro asked for 250g of flour to 250ml of water this is impossible as it’s 100% hydration .
