The Hakushu Distillery is one of the highest distilleries in the world, built amidst the deepest forests of Mt. A green and crunchy entry in the Hakushu Range, combining whisky of a wide variety of ages, from across the range of casks used by the distillery to create a gently smoky dram, packed with fruity flavour. Crafted by Suntory at their Hakushu Distillery, nestled deep in Mount Kaikomagatake, in the stunning Akaishi Mountains. This wonderous whisky is brimming with peppermint, melon, cucumber, yuzu, grapefruit, lemon, thyme and a touch of subtle smoke.

It is considered to be the best water in Japan and is bottled and sold by Suntory, the distillery’s owner. Rather than their usual battles on the martial arts mats they are going to let the whiskies do the fighting. As if on a rainy day we were walking around on a carpet of moss in a dense pine forest, with ferns and heather with a running stream in the background where we suddenly found a fruit stall with yellow peaches, pears and honeydew melon. The majestic forest that surrounds the Hakushu Distillery shelters an abundance of plant varieties and was chosen to reflect the many expressions of Japanese nature. Inspired by that interplay, Suntory Whisky Toki brings together old and new -the House of Suntory's proud h.Straight from the untouched forests, mountains and pure waters of the Southern Japanese Alps, it is no wonder that Hakushu is a “green and fresh” whisky, praised by the most curious whisky connoisseurs and lovers of gastronomy. The Hakushu 12 Single Malt is made up of carefully selected malt whiskies all aged for a minimum of 12 years in various casks, created in honor of Suntory Whisky's centenary. Palate - Herbacious, slightly resinous, cucumber and mint with the former fading quickly and the latter hanging in longer.

Hakushu is the second distillery that Suntory opened in 1973 after Yamazaki way back in 1923 and was at one point in the 1980's the largest distillery in the world in terms of volume of production. The malt whiskies born here are simultaneously blessed with a very particular microclimate, verdant forests, and water offering a rare softness and purity, only made possible by filtration of rain and snow through thousand-year-old granite rocks.Tasting the whisky was a really nice experience too, there was no sharpness or harshness to the taste, and it seemed like a very mellow Speyside to me. Palate All the notes on the nose swim effortlessly through the palate, the mint developing sweeter notes as it goes on.
