I had a nutibullet (high speed blender) that I had to make smaller batches in, but it sure made it quick and a nice good mash! You’ll also need a big spoon, lots of raw ginger, lime and club soda (because you won’t want to drink the undiluted concentrate). Then we add freshly squeezed lemon juice, and blend with four different types of dark and light sugars to give a complex and unique flavour. I did use a tad bit less lime, and subbed agave nectar for the simple syrup…Patron’s silver was the spirit of choice.

And they go perfect with any and all Mexican dishes, which is great because we eat some form of tacos at least twice a week. The ginger that we source from Nigeria has an aromatic intensity to it that adds depth to the ginger flavour. I mention this for anyone wanting to make it ahead – you could at least do the hard part (getting the ginger juice) well ahead and freeze it, then make the rest of the recipe later.
