Use your burners until the charcoal glows red, turn the burners off and grill the modern charcoal way. Before you begin to use your charcoal tray you will need to determine how much charcoal you're going to need to complete the meal - approximately one layer for burgers or steaks and two layers for roasts or chickens. I started by making small bends across then length of the run and then just went back and forth with the sledge getting more of an angle with each pass.
