I have always adored festive baking because of the flavours, the fact that people get so much joy out of it, but this year really has seen such an increase in baking becoming a hobby that I am even more excited to share delicious recipes! I decided to leave some of the cupcake exposed because I wanted you to be able to see the chocolate cake from underneath, and instead made the swirls of frosting higher! It’s a holiday treat that’s ready in minutes, and perfect for holiday entertaining, or giving to teachers, friends, and neighbours for Christmas. Let’s be honest, this year has been tough and I think we should all try and enjoy the festive season as much as we can, safely. Next add the chocolate chips to a microwave-safe bowl then heat in 30 second increments, stirring between increments, until the chocolate is smooth – mine took 1:30.

Make sure you read the ingredients of the candy canes as some of them are not vegan, they usually contain a red colouring E120 or cochineal which is made out of crushed beetles. Most supermarket tend to sell the mint flavouring now but just make sure its extract and not essence!Also, I fully plan to share a new candy cane or chocolate peppermint cake with you each holiday season. Let both chocolates cool slightly for five minutes or so then add the peppermint essence to the white chocolate.

This simple recipe for the classic Christmas treat features 3 layers of white and dark chocolates flavored with peppermint extract, plus crushed candy canes for garnish. If nothing sticks to your toothpick, it may have baked a little too long, so in that event only let it cool in the pan 5 minutes then remove to a plate and refrigerate to stop it baking further from residual heat.They have a series of these Nutcrackers every year, so I am hopeful, but alas, I haven’t been able to find it. Once all the cookies are drizzled and sprinkled with the crushed candy canes, allow the chocolate to set and firm up. Recipes like my White Chocolate Bark and Dark Chocolate Bark are all about the simple combination of melted chocolate and creative toppings. When I did have bark pieces that separated, I took some melted chocolate and placed a little bit on one of the pieces before using that as a way to glue them back together. Please note, the nutritional information is based on the bark being broken up into approximately 18 pieces and 3 being enjoyed as a serving.

There is no point trying to cut this with a knife, I tend to just break it up into shards and it forms a rough bark looking shape hence the name! The topping is simple – mini candy canes, and some crushed candy canes – this is optional, but is obviously the entire point of the bake! But I did discover a sweet spot that could help minimize the chances of breakage at least with this particular chocolate brand.Put the candy canes in a plastic bag, reserving one for the centre if you wish, and smash them up with a rolling pin. But if you were heavy handed with the peppermint extract in the frosting, or if you just like them, you can leave the candy canes out or just layer them in the filling. If you MUST do more than that at once, I would recommend melting the chocolate by using a double boiler and NOT in the microwave.
