Having made a name for themselves making fine English wine, Lance and Caroline Whitehead turned their attention to the spirit that was Lance’s drink of choice during his time in the RAF. They sourced a beautiful still from Germany, local water from their estate and botanicals from around the world. The resulting flavour of Dartmouth gin is relatively complex, with botanicals ranging from aromatic cubeb berries to Scotch pine. The overriding sense is that of a well-made classic – smooth and full-flavoured. So. A fine martini and a fine G&T. Indeed, I’d go so far as to say that Copperfield Gin is the kind of thing of which you could happily partake every night and not get bored. The special edition ‘Copperfield H 2 Gin’ is being produced in a limited initial batch of 500 bottles and went on sale today.The collaboration exemplifies exciting British innovation and creativity, bringing together two neighbouring, Surrey-based businesses. It also highlights how hydrogen could support decarbonisation of the UK’s 400 plus gin distilleries and more broadly the food and beverage industry to meet net zero targets.” Named CopperfieldH 2Gin, the special edition expression is produced in a limited initial batch of 500 bottles.

To make each batch, they combine their brilliant Hills & Harbour gin with a full wheelbarrow of smoked pineapple and burnt oranges to create a 40% ABV sweet spirit that can be turned bitter, balanced or sweet simply by adding tonic, soda or lemonade respectively.

The Copperfield gin harnesses the ingenuity of two local businesses to demonstrate creative ways in which clean hydrogen can be used to mitigate greenhouse gas emissions and support the transition to a zero-carbon future.” Juniper rich, lightly floral with woody spice Copperfield London Dry Gin is round and smooth with good complexity and length. Copperfield gin is hand-bottled and hand-labelled. Its distinctive book-shaped bottle perfectly fits the hand for pouring. It is embellished with a stunning illustration of interwoven botanicals overlaid with rich copper foiling and pays homage to book covers from the late nineteenth century. It is elegant and utterly unmistakable. The Copperfield gin is being distilled using power provided by an AFC Energy H-Power Tower which can produce electricity from hydrogen; by combining hydrogen with oxygen from the air the fuel cell produces energy and pure water.

The approach has been deployed to significantly lower CO 2 emissions across the distilling process. A leading provider of hydrogen power generation technologies, AFC Energy have supplied a H-Power Tower used to distill the Copperfield gin. It produces electricity from hydrogen, resulting in much lower CO 2emissions throughout the distilling process than what is typically used. As Chris explains, “The pub has a lot of history, and is said to be where, centuries ago, a local police officer arrested a gang of regulars who also happened to be sheep rustlers. He became known as ‘The Surrey Copper’ and it just seemed to fit with the rest of our thinking.”Our ethos is traditional,” says Chris. “Our gins to date have been classic London dry gins, made with plenty of juniper – that’s important to us. We also want them to be smooth enough to drink as a sipping gin, but robust enough to stand up to a premium tonic!” Working with specialist spirits branding agency, Stranger & Stranger, the ‘Social Distillery’ has created something which is the envy of many. They wanted to produce something which depicts the truly stunning scenery found on the island – and what a job they’ve done! The partnership between the two companies in creating this unique gin is said to showcase the exciting innovation happening across Britain, as well as highlighting how hydrogen could support the decarbonisation of many of the UK’s gin distilleries. Copperfield vol. 1, their flagship gin, is a supremely high-quality spirit – rich with juniper and exceptionally smooth. It is handcrafted in small batches in a traditional copper pot, and its botanicals (Orris Root, Angelica, Liquorice, Coriander, Lemon Peel) are straight from the 1757 edition of the original distilling book, ‘The Complete Distiller’ – about as traditional as it’s possible to get. Katherine stumbled across this original recipe when building her distilling library, and resurrected it. You can even see the original 18th century scribbles on the inside of the bottle label.

Cover the pudding with a pleated sheet of buttered parchment, then a pleated sheet of oil, and tie firmly around the rim with string. In line with gins of the 18 th century just 10 carefully selected botanicals are used (juniper, angelica, orris root, liquorice, cubeb berries, lemon peel, elderflower, caraway, cardamom and coriander). But it’s not to be confused with all the other London dry gins out there. George is a self-taught distiller and didn’t have access to the typical recommendations when creating the recipe. As such, it’s not so much a typical gin with a few botanical adaptations, but the result of proper ‘trial and error’ distilling. There’s a fantastic marzipan smoothness holding the whole thing together. As that implies, there’s a touch of sweetness, but that’s balanced by pepper and spice and, yeah, a bit of fire. Lime comes through towards the end, cutting the creaminess rather nicely. That sounds as if there’s a lot going on (which there is), but this is far from a try-hard gin. It’s pretty clean and subtle, in fact. I think that subtlety betrays a great deal of careful tasting and balancing on the part of the makers. I give it grade A for a Martini. That stands Copperfield in pretty good stead when it comes to the ultimate test. It makes a martini that’s squarely classical, rather traditional. Which I like. Fill the basin one-third full with the pudding mix, then pop the orange into it. Add the rest of the pudding mix around and on top of the orange and smooth over. Copperfield London Dry Gin Volume Three is juniper-led and exceptionally smooth with traditional winter spice notes and subtle hints of bitter orange.
