Rich plum, cherry, dark fruits with a touch of oak and a smattering of cloves and that velvety rich deep dark chocolate gliding over the tongue. The chocolate cannot be missed but it manages not to be overpowering and the taste is utter pleasure. Rubis wine is a wine to take your time with and to savour. The Wine Bar located at 12 Fownes Street Upper, Temple Bar in Dublin 2 is an awesome place to visit regardless of your wine expertise. From their quality selection of wines to their friendly and knowledgeable staff, this spot offers something for every occasion.

In Religious ceremonies, hundreds of thousands of people a year were sacrificed and to be brave enough to put yourself forward for this was considered an honour. This usually involved heart extraction and when the ceremony was over, they didn’t leave anything to waste. Their flesh was baked with corn and fed to the Nobles. If there were enough sacrifices the whole city would be able to feast on the remains. Before the person was sacrificed, they were given cacao drinks mixed with human blood to prepare them as an offering to the Gods. All in all it’s really one of my favorite spots in Dublin as it brings together joyousness through different elements making up a truly fantastic experience overall! Name Rubis suggest the wine is chilled and served with ice to experience the best flavour or at room temperature. Rubis wine is made using Tempranillo grapes which are grown in La mancha, Spain. These are Spain’s number one grape and in the Autumn the vine leaves turn red.

This place is a must-visit! From the stunning interior design and warm atmosphere with great music to the amazing food, I thoroughly enjoyed my experience. The staff was very friendly and courteous in helping me select a wine that pairs well with my meal, which made it all the more enjoyable. Tempranillo is diminutive of the Spanish word ‘temprano’ which means early. This is due to the grapes ripening several weeks earlier than most Spanish red grapes. On to the wine tasting Cacao was not easy to source near Court as it grew in the south amongst the Mayan lowlands and because of this, the drink was usually served to people of high society standing such as Nobles or Warriors and presented at the end of Banquets. ReligionFinally what sets The Wine Bar apart from its competitors is their fantastic atmosphere – warmly lit yet cosy enough for conversation; perfect for larger groups but also intimate enough for duos as well. Whether one wants a romantic evening out or if they’re simply seeking a cool afternoon hangout spot – this joint satisfies either case to perfection! All in all I would highly recommend visiting this amazing venue whether it’s a date night or small get together – great times behind guaranteed no matter what!!! Name On pouring, the wine is a beautiful ruby colour and on the nose it gave plums and cherry and the wonderful smell of dark chocolate. The atmosphere here was really inviting too; upbeat and fun music to set the mood for some great conversation. They even host events such as dinner clubs which are perfect for people looking to meet new friends and enjoy a night out without being overly crowded or noisy like some other options in Dublin! The first thing that stands out about Ely Wine Bar is the staff. They are attentive, personable and very knowledgeable about the food and wine options available. The menu was full of interesting combinations with amazing flavors. Every dish we tried was delicious, especially their Burrata and Scallops! Additionally, they offer a unique secret pairing experience which can’t be found anywhere else in Dublin 2.
