The whole of London got to laugh, dance and play in the same space – and, according to French author Francis Wey, the atmosphere was always one of good natured frivolity. He says, “We’ve tried to develop something balanced and delicate, where the botanicals work in harmony, but also a spirit with a certain robustness.

When it came time to make his own name in the gin world, he looked to his adopted home for inspiration. At just a shilling, entry to the Cremorne Pleasure Gardens in Chelsea was a steal, giving you access to elaborate fountains, a theatre where ballets and burlesques alike were performed, a fairy bower and a banqueting hall. They had long been built over – they didn’t even make it into the 19th century – but they were still an important part of the neighbourhood’s history and identity.I think the fact that we chose different colours for the bottles worked really well and had great shelf appeal. Built in what used to be the outskirts of London – Chelsea, Marylebone and Vauxhall, to name just a few – the pleasure gardens of the 18th and 19th centuries were so much more than picnic spots.

It’s easy to communicate a ‘quince gin’ as opposed to a product like Whitley Neill, which has got nine botanicals, so we created spirits that led with a predominant flavour. The Pleasure GardensDistillingCompany is situated less than a mile from the Mayfair-based RAF Club, a private charitable membersclubfor serving and former serving officers of theRAF and their families. So in the Whitley Neill range we look more at global flavour, although the rhubarb and ginger brought it back to the UK. We’ve got stills that are capable of distilling some quality rum so we’ll do some experiments and see what we get. JN: It’s been a hell of a ride from early days when it was very hard to sell a premium gin to a bar and restaurant.I’m always trying to work on a couple of new flavours and once we have the larger pot still we can play with some rum and do some ageing and stuff like that.
