Large mug (or two!) for the sponge: We like to use two of our extra-large mugs. The mug will only end up being half full of sponge, but it does need room to rise while it’s in the microwave.This also limits spillage and time spent cleaning the microwave.

The pudding is made complete by a silky caramel toffee sauce and is often served with a side of ice-cream or cream to cut through the sweetness. It’s one of my favourite comfort foods! Mix together self raising flour, cocoa, sugar and milk in a coffee mug (or other small microwave proof jug). This recipe is quite magical! If you have not tried the classic Self-saucing Chocolate Pudding, you will be pleasantly surprised with how this will turn out. Simply add the cocoa powder and sugar on top of the batter and pour boiling water over it. It will come out of the microwave as a rich chocolate cake with the chocolate sauce at the bottom. Add the fact that you can make all this happen in just a few minutes without baking and just 5 ingredients? It is culinary magic at its finest! Classic Self-Saucing Pudding - Full Size! What do I Need to Make it? Can I use dark brown sugar? Sure, you can. It contains more molasses, giving a deeper and more complex flavour synonymous with toffee.As you can see in the top photo, I served my son’s in a bowl with a few banana chips. Me? I couldn’t wait. I just spooned ice cream into the mug. Your dessert dilemma is sorted. Next, you’ll add the butter and microwave for another 30 seconds to help it melt. You may not need that long if your butter is already room temperature, it just needs to be melted enough to stir in. Then stir in the sugar and leave to cool a little. You can mix the batter in the mug, add the jam at the end and push it under the batter (less dishes). Although the sponge was said to resemble an English muffin rather than the pudding we know and love today.

Sugar: you can substitute brown sugar with white or caster sugar. Please note brown sugar makes the pudding softer and richer. Canola oil: Adding oil to the batter will make the mug pudding super moist. You can use any type of vegetable oil. Please note that if you use rich olive oil, it may change the flavour of the pudding. Cocoa powder: Use unsweetened to make sure that you do not end up with a pudding that is too sweet.Some say it originated at the Sharrow Bay Hotel in the Lake District in the 1960s, from a recipe the owner got from a Mrs Martin in Lancashire, who in turn got it from a Canadian friend. Can I use butter? Yes, make sure to melt it first. It will give the pudding a more decadent taste but will not be as moist as when using oil. As is always the case with mug recipes, always go for bigger mugs (even bowls will suffice) as they rise far more than usual oven recipes. Always make sure to fill in only about half of the container you're using. Can I use water instead? In a pinch, yes. Though it will not be as rich and creamy, it should still be good. Scrape the mixture into a microwave-safe mug (one that’s around 250ml is ideal – try to avoid anything wide and shallow) and cook on High in a 900W microwave for 2 minutes. Leave to cool in the mug until just warm – it will sink a little as it cools.
