Our recipes are developed using weight measurements, and we highly recommend using a kitchen scale for baking whenever possible. However, if you prefer to use cups, volume measurements are provided as well. PLEASE NOTE: the adage “8 oz = 1 cup” is NOT true when speaking about weight, so don’t be concerned if the measurements don’t fit this formula. Roll up the plastic wrap and make sure the frosting is at the edge of one side of the plastic wrap. You may need to use scissors to cut off the plastic wrap.To create a rosette cake, you will pipe rosettes using the 1M tip all over the sides of the cake as well as the top of the cake. Featherweight Decorating Bags – Made of flexible, durable polyester material, these decorating bags can be reused over and over again. Available in a variety of sizes ranging from 8 in. to 18 in., these bags have a grease-resistant coating inside, so icing won’t seep through. They are dishwasher safe and only get better with age! To create a rosette, point your star tip down in the center of cupcake and apply pressure while making a lower-case “e” and then continuing the circular motion until the rosette is the size you want. In the image you can see, left to right, an Ateco 9885, Ateco 844, Wilton 1M, Ateco 842 and Ateco 824. The variations are not so subtle (like the #9885) to very subtle, but if you look closely at the 1M, you will see that the opening is very clearly defined, with straight lines and an opening that is neither too open nor too closed. Perfect. After you first fill your piping bag, make sure to squeeze out some of the frosting onto a plate or parchment paper if using more than one color of icing. This allows each color to fill the tip so that it shows up in your piped buttercream rosette. Carefully place the first bag of icing into the middle of the second bag of icing. Remove the icing bag from the cup and begin making frosting rosettes. Rosettes will work with a wide variety of frosting recipes, from simple American buttercream to silky Italian meringue. Even something like cream cheese frosting will work, provided it is not too soft. With this decorating technique, you want to use a frosting that is medium consistency–stiff enough to hold its shape once piped, but not so stiff that the edges are ragged and uneven.
