It’s slightly aged and you can make any tiki drink with it.” — Fred Dex, Master Sommelier/Wine Entertainer/Founder, Taste Like a Master, Brooklyn In terms of other white rums I have enjoyed such as Chairman’s Reserve White Label and Appleton White this is more grown up – more “sophisticated”. It has more complexity and subtlety. It bridges a nice gap between fairly standard 40% ABV white rum and the brain exploding 55% and above Overproof rums.

There are a few white rums out there that have attempted to blend together various rums from various islands – Banks 5 Island Blend and Plantation’s 3 Star. I don’t think either of those really run this close at all, to be honest. The rum used can totally change the profile of a Daiquiri as it’s the most potent component. A raw and grassy rum will impact differently to something clean and column distilled. Whilst this is noted as being a white/silver rum, you will also note from the photo’s that Veritas has a yellow-ish haze to it. It is not ruthlessly filtered. There’s something candied like about it – almost like a white coconut. There are notes of alcohol and subtle vanilla, banana (both ripe and green), and marzipan that also waft out.

This is really quite a complex rum, it starts off all Jamaican and then gently blends into the Bajan rum. Giving you quite a two-dimensional experience. The finish is light and warming, with enough spiciness to keep things interesting. It fades out nicely but has a reasonable length that said. The Jamaica Pot Still influence doesn’t overpower the overall feel of the rum. Plantation 3 Stars is a white rum from the French based bottling giant Plantation . The name is coined from the 3 “stars” of the Caribbean from which the rum is obtained. Namely Jamaica, Barbados and Trinidad. As with most of the Plantation rums there is no age statement. WARNING: be VERY careful handling dry ice – do not let it touch exposed skin. We use gloves and tongs to transfer into each glass. You only need a very small sliver to create the effect. If you add to much, the drink will start to freeze.

It is balanced well, though, with some of the notes from the Barbados rum and just a dash of Jamaican, whose presence is felt a little more on the nose than in the palate. We would have liked to have seen the Barbados and Jamaican rums shine through a little bit more, especially in the midpalate and finish. Their rum is unique in the sense that it is made using traditional methods and aged in oak barrels, giving it a distinct flavor profile that is unlike any other rum. Well-rounded flavor profile: Ginger beer and rum add spiciness, cherry and lime juice contribute a great tart flavor, and grenadine rounds everything out with a nice touch of sweetness.
