The class begins with a welcome Cotswolds Cloudy G&T on arrival, whilst your host will talk you through the history of gin and explain how this juniper flavoured spirit is made. You’ll then be taken on a tour of the distillery and shown around our research and development lab, where you’ll be getting up close and personal to our Holstein still, Valerie, whilst learning about the process of single pot distillation and how our Cotswolds Dry Gin was developed.

Cotswolds Dry Gin is very restrained in its use of cardamom and lavender. Rather than hit you in the face with it— despite the 10x botanical remark— the two add color but never take center stage. You’ll get a slightly more vegetal take in your Cotswold’s Gin and Tonic also, with notes of celery and eucalyptus adding perceptual coolness on the nose and palate. I recommend it garnishes with a slice of cucumber rather than the usual citrus fruit. You'll learn how they create their award-winning spirits; from the selection and distillation of botanicals, to the intricate field-to-glass journey of the ethically sourced speciality coffees of their famous Conker Coffee Liqueur. Founded in 2016 by owner and Master Distiller Neil Harrison, Nelson’s is a small-batch distiller based in the picturesque Staffordshire countryside and producers of the special edition Gluggle Jug Gin, Craft Gin Club’s Gin of the Month in June 2019. You’ll be greeted with a ginny tipple in hand, be taken through the chequered history of gin and learn how Sipsmith came to be. Our three copper ladies, Prudence, Verity and Constance will then take centre stage and you will learn how our award winning spirits are carefully hand-crafted. Naturally, there will be a tutored gin tasting too. At the end of the tour, you can make yourself at home in the tasting room to sample the full range of spirits and liqueurs. These award-winning tours run three times a day, seven days a week. The shop and tasting room are open Monday to Saturday from 9am to 5pm and on Sundays from 11am to 4pm. When a spirit contains a large amount of hydrophobic essential oils— commonly found in botanicals such as anise— normally soluble in ethanol begin to come out of solution as water is added. As you drip water into Absinthe, Ouzo or gins like Cotswolds Dry Gin, cloudiness begins to appear.
