About this deal

All of these grains are naturally gluten-free and are loaded with many nutrients and health benefits. Dust the dough and work surface with a small amount of extra rice flour and begin to roll into a circle, about 18-cm (7-inches) wide. I like mine quite large but to keep this beginner friendly I purposely made them small (as pictured). The dough needs to be rolled out evenly, meaning the same thickness all around and rolled as thinly as possible. It comes with lots of practice, so if you are a beginner or this is your first time making roti, then don't be so hard on yourself.

Using a combination of cassava flour, tapioca starch, brown rice flour and other ingredients creates roti heaven. I realize that you published this recipe a long time ago, but I just saw it and I it is perfect timing. In other words, it acts as a pseudo "gluten" the protein in flour that creates that binding element. It felt useful and exciting to channel my energy into something more real; Into something I could eat. Alternatively, you can use a pair of tongs to transfer the roti to an open flame (topped with a heatproof rack).

Slice the dough into 4 quarters then roll each piece into a small ball then cover the bowl with a damp cloth. You can also use a standard oven, but keep the temperature medium/low to avoid turning the chapati overly crispy. I was missing wheat chapati and parathas after being on gluten free diet so I tried various combination of flours and this one came out to be the winner. These flours provide the structure and texture for the chapatis and help to bind the dough together.

It's so flavourful that you can even have it on its own or pair it with your favourite chutneys and curries.There are many variations to chapati recipes, as this soft bread is native not just to the Indian subcontinent but also to the Caribbeans and East Africa. Remove the lid from the pan and transfer the mixture to a wide kneading plate (parat), or onto a clean work surface.
