The liquor became known to the public, and in 1884 the San Pedro Sugar Factory was founded, making it the oldest distillery bodega in Europe and a direct supplier to the Royal Courts. But Canary Islands rum wasn’t unique only to Gran Canaria, and Tenerife also developed a strong presence on the market.

After the conquest of the Canary Islands, extensive cultivation of citrus fruits, coffee, sugar cane and various types of spices, including cinnamon, were developed. In fine spirits (sorry), we headed into the centre of town to explore. Like Puerto de Mogan, it’s another pretty collection of twisty streets (although a lot hillier) with the impressive Gothic façade of the church of San Juan Bautista looming over the coloured 19th century buildings – its 60m spire is the highest on the island. High expression vintage rum that pays homage to the original recipe of the first Rum Master of the Quevedo Family, the founder, made in Gran Canaria in 1936. This edition is the 1998 vintage, aged for 24 years. The archipelago's wine production is not only diverse but also of enormous quality, something that is reflected in the eleven PDOs that the archipelago has and in the numerous awards they win every year. Canarian rum has, in general, a bright, golden and translucent tone that becomes more intense the older the rum is.

Made from molasses or the unfiltered first fermentation, honey rum gets its name from the amount of honey within it, which is over 2% of the total volume.
