Though the design of this book might allude to an era where bold ideas for vegan meals were a rarity, these days few major cookbooks are released where there are not at least a few delicious options. The software developer-turned-blogger sensation brings Indian cooking to the modern kitchen by simplifying traditional recipes, demystifying spices and pantry staples, and creating healthy versions of classic dishes.The book features more than 100 delicious vegetarian dishes that range from basic snacks to flavorful dinners for the entire family. I am mostly commenting from the perspective of a home cook who is always looking for new, delicious, versatile recipes — especially vegetarian ones. We are not vegetarian, but we eat mostly vegetarian meals, consuming a small quantity of meat or fish maybe once a week usually as a flavorful accent. These recipes--which are inspired by the vegetarian home cooks of India--are simple in execution but incredibly complex in flavor.

I love the author's spicing, but the angst of being thrown onto my own resources to rescue the recipes makes the book worth much less than it should be.Known for his game-changing approach to cooking with vegetables, Jeremy Fox first made his name at the Michelin-starred restaurant Ubuntu in Napa Valley. A beautifully produced book with lovely pictures, most of which match the recipes (but not all--which is confusing). Drawing inspiration from India’s myriad regions and culinary traditions, Pushpesh Pant simplifies this hugely popular cuisine with easily achievable, nourishing, and authentic dishes so tasty and satisfying that they are suitable for vegetarians, meat-eaters, and those simply wishing to reduce the amount of meat in their diet.

MADHUR JAFFREY is the author of many previous cookbooks--seven of which have won James Beard Awards--and was named to the Who's Who of Food and Beverage in America by the James Beard Foundation. But with this cookbook I ended up with A HUNDRED AND ONE recipes on my list — I wanted to make most of the recipes in this book right off the bat. What I can say is this: as someone familiar with this cuisine, it is wonderful to have precise measurements for recipes that have been imbibed through 'seeing' my mom, aunts or friends cook. Nisha Katona, founder of the famous Mowgli restaurants shares some of the most iconic recipes such as lamb curry, Fenugreek Kissed Fries and the wonderful Chaat Bombs - small crisp pastries filled with a special indian mixture that causes the perfect explosion of flavours when bitten into. To complete the selection of healthy, vegan-friendly dishes, Richa Hingle also adds a few gluten-free recipes you should definitely try.The recipes might seem intimidating, but that’s just because there are many spices – once everything is assembled, they are a breeze to prepare.

I was particularly attracted to these as delicious, protein-rich (and low-carb) flavorful variations on flatbreads.Chef and restaurateur Rohit has worked at some of the UK’s best Indian restaurants, including Trishna and Bombay Bustle, but in Tarkari, his first book, he goes back to his roots and home-style cooking. I am South-East Asian/Indian and am not bothered by the fact that there are not enough pictures in the book as some other reviewers have stated.
